Author note

Raymond Blanc was born in Besançon, France, in 1949. He has never had a cookery lesson, but in 1984 he opened Le Manoir Aux Quat' Saisons at Great Milton, near Oxford. The restaurant has gathered a host of accolades, including two Michelin stars, three Egon Ronay stars and the description of 'Best Restaurant in Great Britain' from The Good Food Guide.
